Tried out my new mixer! *updated*

October 30, 2007

I made this:

Blueberry Oat Bread

2 cups all-purpose flour
1 cup rolled oats
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. allspice
3/4 cup low fat milk
1/2 cup butter or margarine, melted
1 Tbls. grated orange peel
2 eggs
1 1/4 cups fresh or frozen blueberries (not thawed)

Combine dry ingredients in mixer bowl. Add milk, butter, orange peel and eggs. Beat on low for 30 seconds. With spoon, gently stir in blueberries. Spoon batter into bread pan that has been greased on bottom only. Bake at 350 for 55-65 minutes, or until toothpick comes out clean. Cool in pan 10 minutes. Remove from pan and cool completely on wire rack.

Yield: 16 servings
Per serving: About 196 cal, 3 g pro, 31 g carb, 7 g fat, 27 mg chol, 177 mg sod

Franz loves blueberries, so we always have some in the freezer. I found this recipe and couldn’t pass it up! I did not use orange peel, as I didn’t have any, I also didn’t have allspice, so I substituted cinnamon, cloves and nutmeg! :) It is still baking, but I will post an update once I have tasted it!!! :) It SMELLS wonderful! :)

*update*

OK.  It cooled and Alex and I had a sample.  Delish! :)   I like it just the way it is.  Of course, a big slab of melted butter would have made it all better, but there is already 1 stick IN the bread…so I can’t justify that! LOL    Alex just LOVED it! :)   He is eating some more as I type!!  So, I suggest you try this one! :)
